Heading out for a picnic this summer?
Whether it’s an impromptu trip to the park or a get together that you’ve been looking forward to for ages, there’s undoubtedly something special about picnics. Having a picnic is all about eating outdoors with great conversation, sunshine and tasty treats to enjoy!
But if you’re looking to expand your picnic menu beyond the usual devilled eggs and soggy sandwiches, then read on. We’ve got some delicious treats lined up on our ‘quick-nic’ menu. Quick-nics are fast, tasty food that’s easy to prepare. It’s perfect for that surprise picnic in the park when the sun peeks out!
Here are your Summer Quick-nics (Fast & Easy Picnic Treats):
1. TOMATO AND PEACH SALAD
Fresh and juicy, this colourful salad is full of rich, summery flavours that will transport your taste buds straight to Tuscany.
Combine fresh slices of tomato and peach with a handful of chopped coriander and finely sliced sweet red onion. Dress with extra virgin olive oil, a squeeze of lemon juice and seasoning. This is perfect for your summer picnic!
2. CHICKEN AND PESTO WRAPS
Perfectly wrapped up, these are handy little parcels that are ideal for smaller hands to grasp hold of.
Combine strips of cooked chicken with thinly sliced tomatoes, cucumber and romaine lettuce. Place in the centre of a large tortilla wrap, and add a generous amount of pesto on top. Roll up the tortilla, and slice in half.
3. PURPLE HUMMUS
Need a splash of colour on the picnic table? This dip is ready in less than 10 minutes, and is the perfect partner to vegetable sticks, pita bread or bread sticks.
Combine a drained can of chickpeas with two small cooked beetroots, the juice of one lemon, one garlic clove and a generous drizzle of olive oil. Pulse through in a blender until smooth.
4. MOROCCAN CARROT AND DATE SALAD
A hint of spice gives this sweet and crunchy salad some great depth and flavour. A perfect compliment to a full flavoured cheese!
Finely grate carrots, and combine with chopped dates. Add a squeeze of lemon juice, some crushed cumin seeds, fresh mint leaves and a touch of dried chilli flakes. Combine them all together.
5. RAINBOW COUSCOUS
Couscous is fantastically easy to prepare – and a great base for a variety of dishes. Serve with salads, cold meats and even fruit!
To prepare, combine equal amounts of couscous grains with freshly boiled water. Place in a bowl and stir through. Keep it covered. Stir through with a fork occasionally to break up clumps and keep the grains light and fluffy.
Dice up a variety of vegetables – cucumber, tomatoes, peppers and corn are a great combo. Toss them with a simple dressing made of olive oil, lemon juice, paprika and seasoning. Combine them with the couscous grains to enjoy.
6. FRUIT KEBABS
These are super easy to assemble! Just pack cubes fruit and kebab skewers and put them together at your picnic. Great fruit choices are watermelon, mangoes, pineapples, strawberries and kiwi. It’s perfect for kiddies to enjoy and a fresh option for dessert during summer picnics and parties!
